The Secret to Baking Salmon
If the thought of salmon brings back memories of a horrible banquet dinner, it’s probably because the fish was cooked into a dry, tasteless entree. The key to making delicious salmon is to avoid overcooking it to keep the fish moist. Visually, a fully cooked piece of salmon shouldn’t be deep red in the center, and the meat should flake easily with a fork. However, rather than guessing, it’s better to use a cooking thermometer to determine when the fish is done. The internal temperature should be 135° to 140° F and then allowed to rest so it will rise to about 145° F.
Ingredients for Honey Baked Salmon
- 24 ounces of TBS salmon fillets (skin on), cut into 4 equal fillets
- 1/4 cup local honey
- 1 tablespoon of pre-minced garlic
- 1 1/2 tablespoons of low-sodium soy sauce
- 1 tablespoon rice wine vinegar
- 1/4 teaspoon red pepper flakes
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt
- Juice of one lemon
- Fresh cilantro or green onion, chopped, for garnishing.
Directions:
- Preheat the oven to 400 F. Place the baking rack at the center level.
- Line a 9 x 13-inch baking dish with aluminum foil and set it aside.
- Prepare the glaze. In a small saucepan, combine the honey, garlic, soy sauce, vinegar, and red pepper. Turn the heat to medium and stir continuously until the sauce begins to boil. Once it boils, keep stirring the sauce and turn it down to low to simmer the liquid until it thickens (about 3 minutes.). Turn the burner off and allow the sauce to cool for at least 3 minutes.
- Pat the salmon fillets dry with paper towels. Arrange them evenly in the baking dish.
- Brush the fillets with olive oil and sprinkle with salt.
- Pour the glaze over the fillets. As glaze fills the bottom of the baking dish, scoop it and place it on top of the salmon.
- Bake the fillets for 6 minutes. Remove from the oven, and then use a spoon to scoop the glaze from the bottom of the baking dish and drizzle it over the fillets again.
- Return the fillets to the oven and bake until the internal temperature reaches about 140F (about 6 to 8 minutes for a one-inch thick fillet.)
- Remove from the oven and cover with a sheet of foil. Allow the fillets to rest for 5 to 10 minutes.
- Serve each fillet over a bed of your favorite style of rice. Scoop up the sauce from the bottom of the baking dish and drizzle over each piece. Squeeze fresh lemon juice on each and sprinkle with the cilantro or green onion.
