A flank steak is one of the tastiest, most effortless cuts of meat to prepare. It’s also called a London broil and a skirt steak, although a skirt steak is a different cut with similar properties. However, skirt and flank steak can often be used interchangeably in recipes. This flank steak with mushroom sauce recipe is just the thing to fill your appetite.
Flank steak should be marinated before grilling. The marinade will help prevent it from becoming tough and rubbery on the grill. The steak will cook quickly, so don’t walk away from it. This recipe is simple to prepare and grill, and we’re confident your entire family will love it.
Ingredients:
- 1 2-pound TBS flank steak
- 1 ½ cup of pinot noir wine.
- About ½ cup of olive oil
- 2 tablespoons of butter, cut into chunks
- 2 strips of thick bacon, cut into ¼-inch pieces
- 1 small onion, peeled and sliced
- 4 cloves of garlic, mashed
- 4 to 6 sprigs of fresh thyme
- 6 ounces cremini mushrooms, cleaned and sliced
- 1 tablespoon cornstarch
- Salt and pepper to taste

How to prepare a flank steak.
Before you marinate the meat, you should properly prepare it. First, use a sharp knife to remove any extra fat from the cut of meat and discard it. Next, use the knife to carefully score cuts into the meat across the grain to break up the fibers and enhance the marinade process. Space the scores about ¼ inch apart and ⅛ inch deep. Repeat the same scoring process in the other direction (perpendicular cuts). Do the same thing for the bottom of the section of meat.
How to marinate the flank steak.
Use a glass baking dish larger than the piece of meat. Spread half of the onions, two cloves of garlic, and half of the thyme in the dish. Lay the section of meat on them, and then cover the meat with the remaining onions, two more cloves of garlic, and the rest of the thyme. Drizzle generously with olive oil. Finally, pour about a cup of pinot noir over the steak and ensure the wine covers the meat entirely. Cover the baking dish with plastic wrap. Place it in the refrigerator between 4 hours to overnight.
Make the sauce:
When you take it out, push most of the onions to the side and place the drained, marinated meat on a rack-covered baking sheet. Strain the marinade into a glass bowl. Pull out the thyme stalks from the onions. You will use the onions, garlic, and liquid for the sauce.
Melt the butter in a large saucepan. Add the diced bacon. Cook the bacon until it begins to brown.
Blot the onion and garlic dry with a paper towel and then add them to the saucepan. When the onions begin to brown, add the mushrooms. Cook until the mushrooms brown. Add the reserved liquid from the strained marinade. Bring the mixture to a boil. Continually scrape the bottom of the pan. Mix the cornstarch and water in a separate small dish and then add to the saucepan to thicken the sauce. Finally, add the butter and salt, and pepper to taste. Whisk it all together and set it aside.
Grill the meat:
Blot the section of meat well with a paper towel. You don’t want any moisture on the meat because that will cause it to stew rather than grill.
Brush each side of the meat with olive oil. Season the meat with salt and pepper. Turn the section over and repeat.
Heat the grill to medium. Grill the steak until cooked to taste. It should take 3 to 4 minutes per side to reach medium-rare.
Cut and serve the steak:
Allow the steak to rest for about 15 minutes before cutting it.
Slice the steak thinly across the grain and arrange them on plates. Cover with a generous spoon of the mushroom sauce.
