Ingredients:
- 1 ½ pound skinless, boneless chicken breast (cut into 1-inch pieces)
- 2 medium sized Yukon gold potatoes (diced into 1-inch pieces)
- 2 cups of baby carrots (cleaned and diced)
- 2 stalks celery (roughly sliced) yields around 1 cup
- 2 can of creamy chicken broth (I used the 98% Fat Free variety)
- 1 cup water
- 1 tsp cayenne pepper and paprika
- 1 teaspoon dried thyme leaves, crushed
- 1/4 teaspoon ground black pepper
- 2 cups all-purpose baking mix
- 2/3 cup milk or buttermilk
- Chopped fresh parsley to garnish
Directions:
- Clean and place the crockpot liner before starting with the process.
- Now place the chicken and all vegetables in your slow cooker.
- Mix the creamy broth, water, thyme, the spice mixture and black pepper in a small bowl. Pour the slurry soup mixture over the chicken and vegetables.
- Set the crockpot to high and cover and cook for 4 to 5 hours. If using the low setting, allow the mixture to cook for 7 to 8 hours until the chicken is tender and cooked through.
- During the last 30 minutes of cooking, prepare your dumplings. Mix the baking mix with buttermilk, salt and pepper and prepare the dumpling dough. Increase the heat setting to high and drop small dumplings into the soup mixture inside the slow cooker. Cover and cook for 30 minutes.
- Check if the dumplings are cooked in the center before turning off the heat.
Serving Suggestion:
