- Cooking Time: 11 – 12 hours (Don’t worry! It is slow cooking. It means you just have to make the preparations and then leave the food to cook for the required time. You are not required to stand by the stove for so many hours).
Ingredients for Ham
- 2 lbs. boneless ham
- 3 teaspoons Muscovado sugar
- 3 cups chicken stock
- 3 small yellow onions (sliced)
- 1 cup Smokey Sauce (recipe below)
- ¼ cup Smokey dry rub (recipe below)
Ingredients for Smokey Sauce
- 8 oz. tomato sauce
- 6 oz. tomato paste
- 3 tablespoons blackstrap molasses
- 2 tablespoons Soy Sauce
- 3 tablespoons honey
- ½ tablespoon Dijon mustard
- ½ cup apple cider vinegar
- 2 tablespoons Smokey Dry Rub (recipe below)
Ingredients for Smokey Dry Rub
- 2 tablespoons sweet paprika
- 2 tablespoons smoked paprika
- 2 teaspoons garlic powder
- ½ tablespoon Dalmatian sage
- ½ tablespoon black pepper
- 3 teaspoons celery seeds
- 3 teaspoons chili powder
- 1 teaspoon onion powder
- 1 teaspoon allspice
- ½ teaspoon cumin
- ½ teaspoon bay leaf
- ¼ teaspoon cayenne pepper
- ¼ teaspoon cloves
- ¼ teaspoon mace
- 2 teaspoons salt
Method (Smokey Dry Rub)
- Put all the ingredients in a food processor.
- Run the processor until all the ingredients are properly mixed.
- In a saucepan, combine all the ingredients. Mix well.
- Bring the mixture to boil on medium heat.
- After the first boil, reduce the heat to low and let it simmer for half an hour. Stir occasionally.
- Cut the ham in big chunks (Approximately 3 inches).
- In a large bowl, add Muscovado sugar and a quarter cup Smokey Dry Rub. Mix well.
- Add the ham chucks in the bowl. Mix well. Make sure all the chunks are properly coated with the sugar – Smokey Dry Rub mixture.
- Cover the bowl and put it in the fridge to marinate to for at least 2 hours (overnight if possible).
- To cook the ham, line the base of a slow cooker with slices of yellow onions.
- Place the marinated ham chunks on top of the onion.
- Next, pour chicken stock over it.
- Cover the cooker and cook it on low heat for 9 – 10 hours.
- When the meat is completely cooked, shred it in the cooker, with 2 forks.
- Now add a cup of Smokey sauce in it. Mix well.
- Replace the lid and cook on low for 2 more hours.
Method (Smokey Sauce)
- In a saucepan, combine all the ingredients. Mix well.

Method (Sweet and Spicy Ham with Smokey Sauce)
